White Chicken Chili

This is a recipe from my sis...

1 T olive oil
2 to 3 lbs chicken breast, cut up into pieces
1/4 c chopped yellow onion
onions from 1 bunch green onions
2 garlic cloves, chopped
1 t ground cumin
1/2 t oregano
1 t ground coriander
1/2 t dried cilantro
dash of paprika
1/4 t salt
1/8 t black pepper
2 T lime juice
1/4 c chopped red bell pepper
2 (4.5 ounce) cans chopped green chiles
2 (15 ounce) cans white kidney (Cannellini) beans, drained
1 (15 ounce) can Great Northern or Navy beans, drained
4 c (1 quart) chicken broth+ 2 c water or broth

1 c shredded monterey jack cheese
1/2 c fresh chives
1 container sour cream

1. Heat oil in a dutch oven. Add chicken and vegetables and cook.
2. Add seasonings to the dutch oven + 1/2 c water. Cook 5-10 minutes. Then add lime juice, green chiles, beans, and chicken broth (and remaining water). Pour into a crock pot and let simmer for 4 to 6 hours. (Or cook on medium heat for 20 minutes to a half hour.)
3. Serve with bowls topped with chives, cheese, and sour cream.
